It's heating up here in Paso Robles, and I increasingly find myself with an extreme hankering for an icy-cold White or Pink wine as the thermometer continues to push upwards. Today I'm here to peddle our newest chillable white treat named "Onomatopoeia." It is a nervy lemon/lime-driven Concrete aged Chardonnay that really SLAPS. Yes, the side effects of this elicit juice could make you scream any numerous versions of an Onomatopoeia, such as BAM, WHAM, or KA-POW. Very rare side effects of this substance may even include imbibers shouting elicit words or phrases. Please be careful who you drink this wine with; mixed company could pick up on your potty mouth.
Initially, I called BS on the romantic idea that aging white wine in concrete would actually impart a mineral or stoney quality to a finished wine. (The French salesmen are always praying on us naive American winemakers, and man, we are suckers!) Well, I'll be darned! The chalky mid pallet on this wine feels like your drinking salt-encrusted stones - like electrolytes quenching your thirst on a hot summer's day. The other 50% of this nectar marinated in 23% New French Oak Puncheons and 27% Neutral French oak. The oak gives this wine's finish a little lemon bar or meringue vibe. You may notice this wine has a slight haze to it. Do not fret! This is unadulterated, hands-off winemaking at work. To ensure we didn't strip the natural beauty, we opted to not filter or fine this wine.
All I can say is this is absolutely the best white wine I have ever made, and I would gladly put it in a blind tasting against any White Burgundy. This wine is all class. We are offering this yumminess in three (3) Pack Boxes.

In other news, we are working towards creating a better experience for our members and guests! I'm excited to announce we are entirely remodeling our tasting room beginning Monday, April 12th, and expect it to be completed by mid-May. Once finished, we will have a few new experiences to enjoy, including a member's lounge where we will taste member exclusives, library wines and other limited bottlings. We will also have a patio area for anyone who wants to enjoy the great outdoors while sipping some vino. That being said, please bear with us during construction. We will be open and hosting one table at a time in our production room until the project is finished.
