Cabbage Potato Pie

I really can’t get enough cabbage. So when I was asked to come up with a new main dish for St. Patrick’s Day, of course I started with a whole cabbage. To increase the comfort food factor, I turned it into a skillet pie stuffed with mashed potatoes, Irish cheddar, and just a little bit of bacon. I blanch the gorgeous outer leaves to line a skillet—that’s the crust of your pie—then fold them over the cheesy potato mixture. (The rest of the cabbage is caramelized with onions and bacon, and mixed into the potatoes, too, along with some eggs, which help it all bake into something sliceable.) Add a salad on the side, or serve it with a roast. The leftovers, if there are any, are very good with eggs in the morning.
