Around these parts, tamales are considered comfort food. Everyone seems to have a soft spot for them. :) One thing's for certain - you'll see a ton of varieties come Fiesta time!
This recipe for Tamales de Cochinita Pibil gets its robust flavor from the Achiote paste used as a rub for the pork butt before roasting. The finished product comes topped with Mexican crema and your pick for hot sauce--I like chipotle!
