We first made these as brownies in a cone but you can use a cake mix too. It's simple. Add batter to ice cream cones, prop them in a muffin tin, and bake them. After they've cooled and when you're ready to serve them, put a scoop of ice cream on top of each. You can use any combination of cake or brownie mix with any ice cream. It's a fun way to cool off on a hot summer day, especially for kids, and it's a lot less work than baking, frosting, and decorating cupcakes. More Ice Cream Topped Cupcakes The cupcakes at the top--that's ice cream under that chocolate coating. Again it's simple to do and a lot of fun. The trick is to freeze the ice cream to the top of the cupcakes before inverting them into the melted chocolate.
