Refreshing Strawberry and Watermelon Salad with Balsamic and Mint |

Soft, sun-sweetened fresh strawberries. Snappy, lightly bitter and palette-cleansing cucumber. Bright, fresh mint. That's summer in a bowl. And, it couldn't be easier. Three minutes of slicing, and your al fresco treat is ready for a drizzle of Balsamic goodness. Ingredients 16 large sliced strawberries Sliced 1/2 English cucumber, sliced into half moons 4 cups watermelon, diced with seeds removed 1/3 cup fresh mint leaves, torn 2 tablespoons Primal Kitchen® Balsamic Vinaigrette and Marinade 1/3 cup crumbled feta cheese (optional) Directions Arrange your strawberries, cucumber, and mint on a large plate. You'll want to reach for the most brightly colored plate you own for this. Drizzle with the Balsamic Vinaigrette, and sprinkle with feta if desired. Find a sunny spot, and enjoy! |

She holds a Master's degree in Human Nutrition from the University of Bridgeport and is also a Certified Nutrition Specialist.
