She said that the most important thing you could do for your baking was add really good cinnamon, that that would change everything. We've been very particular about the cinnamon we use and the cinnamon we sell. This week, we made carrot cake for the store--really good carrot cake. And as good as the carrot cake was, the cinnamon was the star. We set out three shakers of cinnamon--Sri Lankan, Korintje cassia, and Vietnamese--to sprinkle on their cake. People bought the Vietnamese. Nothing had the flavor impact of Vietnamese. We thought we had a lot of inventory. Instead we sold out and flew more in from Chicago.
