Sourdough Biscuits

Like a lot of you, my interest in sourdough has been reinvigorated during our current cooking moment. But the one thing I hate about it is pouring starter discard down the drain every time I go to feed it, if I don’t feel like making brownies or waffles. Enter these tender, tangy biscuits, which can be made with liquid starter at any stage post-feeding, up to a full 24 hours.

They’re ideal for Easter 2020—not just because they’re biscuits, which seem to me an Easter necessity; but also because the starter takes the place of any liquid dairy you might use in a biscuit. That means if you haven’t been to the store to re-up your milk or buttermilk stash, you can still make them if you have sourdough starter. I’ll be baking a batch and celebrating from my couch with my family on Zoom right next to me. Here’s hoping you can find a little comfort and peace in making them, too.
