How to Put Together a Micro Thanksgiving Feast Happy early Thanksgiving, everyone. I'm grateful for the tribe we have here. Depending on your comfort levels, your Thanksgiving might look a little bit smaller this year. But your love, gratitude, and flavors can be as big and bold as ever. Here’s how to prepare your MicroThanksgiving without being stuck with leftovers for weeks. Swap a whole turkey for turkey legs or a turkey breast There’s no reason why you shouldn’t pile your plate with juicy roast turkey. But if you cook a whole bird for just yourself or a small group, you’ll have a lot left over. Cooking a turkey leg or turkey breast allows you to control the amount of food you have without compromising the Thanksgiving flavors you love. One big sweet potato is plenty for two I cut mine into cubes and toss them with just salt, cinnamon, and avocado oil before roasting.
