Raspberry and Pistachio Ice Cream Icebox Cake

Icebox cakes are traditionally made with just two ingredients—whipped cream and wafer cookies, layered together either into a freestanding mound or inside a lined pan and chilled until firm. For the ultimate mix-and-match icebox cake, associate food editor Kendra Vaculin adds a pint of ice cream and a jar of jam into the mix. Here, nutty pistachio and bright raspberry jam spread through whipped cream make for a lovely pastel duo, while Biscoff cookies add a welcome hint of spice.
