This is my all-time favorite pound cake.
And it's moist and fudgy--and it's made with zucchini!
We had a big pine tree that blew over in our backyard leaving a big round spot that I planted with green and yellow zucchini. And yes, we are now awash with zucchini.

Zucchini is wonderful! It adds moisture and nutrition to our baking. It's perfect--except for the water.  Zucchini is 93% water. You grate it; you lose water. You put it in a colander; you lose water. You freeze it; you lose more water.
