Hey there cocktail lover!

Each month we release a unique cocktail with an intensely seasonal focus, to be part of our Spring, Summer, Autumn & Winter collections. We want to take you on a journey through the world of seasons, flavours, spirits and serves that we love, and we want to share them with you all!

The Jungle Bird cocktail dates back to the 1970s, when it was served as a welcome drink to visitors of the Kuala Lumpur Hilton. Originally made with dark or blackstrap rum, we have opted for a lighter, white rum, made in East London.

Rum, pineapple, and lime are typically found in tropical cocktails, but Campari is definitely not a common ingredient. Usually reserved for bitter aperitivo cocktails like the Negroni or Spritz, the bitter aperitivo works surprisingly well in this mix. The fruit flavours help smooth out its bitterness while the rum and sugar bring in a touch of sweetness that draws it all together beautifully.

Our Jungle Bird Recipe

45ml East London Liquor Company Rum
15ml Dispense Amaro
10ml Campari
10ml Demerara Sugar Syrup
10ml Lime Juice
45ml Pineapple Juice
2 dashes Aromatic Bitters



Method

1. Add all ingredients together in an ice-filled shaker
2. Shake for 20 seconds until well-chilled
3. Strain into an ice-filled highball
4. Garnish & serve


Please remember, as this cocktail contains fresh juice, to keep it in the fridge once you receive it.
