The Jungle Bird cocktail dates back to the 1970s, when it was served as a welcome drink to visitors of the Kuala Lumpur Hilton. Originally made with dark or blackstrap rum, we have opted for a lighter, white rum, made in East London.
Rum, pineapple, and lime are typically found in tropical cocktails, but Campari is definitely not a common ingredient. Usually reserved for bitter aperitivo cocktails like the Negroni or Spritz, the bitter aperitivo works surprisingly well in this mix. The fruit flavours help smooth out its bitterness while the rum and sugar bring in a touch of sweetness that draws it all together beautifully.
