Marinated Swordfish

I just love swordfish, but will only cook it if I go out to the market that day and buy it. I make a quick, easy marinade and refrigerate it for at least an hour before cooking. I marinate the remaining swordfish at the same time in a plastic bag and freeze. I marinate all my meat before I freeze them in freezer bags!

I found the cookie cutter online, but you could probably create a cardboard template and cut them out yourself. They came out so cute and everyone loved them!

Cleansing Veggie Date Juice

Veggie Date Juice in glassI especially like making this juice after the holidays as I tend to indulge a bit more. Just a bit! This drink is very low in calories yet very filling. It's full of vitamins, potassium, and antioxidants. Keep the "meat" of the veggies after juicing them to make cakes and spaghetti sauces. In order to keep the drink tasting fun and almost caramel-like, I like to blitz in some dates. Nothing bad in this juice!
