These chicken boti kebabs are flavored with ginger and garlic and marinated in yogurt to keep them moist and juicy. Pile the chicken in a brioche bun, drizzle with a bit of cooling cilantro and mint chutney, and add a dollop of herbed sour cream. No grill? No problem—you can broil these kebabs instead.

INGREDIENTS

• 4 garlic cloves
• 1 (2" piece) ginger, peeled
• 3 Tbsp. whole-milk plain Greek yogurt
• 2 Tbsp. vegetable oil
• 2 tsp. Diamond Crystal or 1¼ tsp. Morton kosher salt
• 1 tsp. ground coriander
• ½ tsp. cayenne pepper
• ½ tsp. ground cumin
• 1½ lb. skinless, boneless chicken breasts, cut into 1" pieces
• 1 small red onion, halved, thinly sliced
• 1 Tbsp. sumac
