There is no Hanukkah without latkes. But—real talk—latkes can be laborious. You either chain yourself to the stove before your guests arrive, or chain yourself there while your guests drink Champagne. So take at least one night of Hanukkah 2019 and make this big pan-sized latke instead. And while you’re at it, cook the apple-braised chicken that goes with it.
