Suya spice, also called yaji, is a fiery blend of ground chiles, ginger, and garlic and onion powders, often with fermented locust beans or bouillon cubes added for real umami impact. One other ingredient really sets it apart, though: ground peanuts. The deeply savory, vibrant mix is the hallmark of the grilled skewers sold by street vendors throughout Nigeria and other parts of West Africa, but it’s a great addition to your spice cabinet whether or not you own a grill.
