While gluten-free pasta options abound in most grocery stores these days, as recently as 2015, the situation was a bit different. That’s when Mason Arnold first founded Cece's Veggie Co., a firm that makes noodle and rice alternatives out of fresh vegetables. Getting a veggie-based replacement for pasta up and running was a long, slow climb. But the slog was worth it, Arnold says — and has left the firm pondering what else it can make out of vegetables.
