Dear Garden Grower, Eat your greens. You’ve heard it since you were a kid, no doubt. Maybe you’ve said it to your kids. Purple and purple-splashed vegetables are showing up more and more in supermarkets, farmers’ markets, salad bars, and maybe even your garden. Purple potatoes, kale, lettuce, Asian greens, and asparagus are appearing alongside the familiar purple plums, grapes, and blueberries. Seed catalogs offer dozens of purple vegetables. And they do, admittedly, bring some visual bling to the garden. While they may expand the color palette on your dinner table, do they offer any nutritional value? “Hundreds of studies over the past 30 years or more have shown that anthocyanin-rich [purple-pigmented] foods reduce the risk of heart disease, stroke, metabolic diseases, and other chronic diseases,” according to Dr. Colin Kay, a nutritional biologist. Plants produce anthocyanins to attract pollinators and seed dispersers, repel predators, resist pathogens, heal wounds, and reduce stress from environmental factors such as excess radiation or cold temperatures. So, how much purple food do we need to eat to repel predators and lower our heating bill? It’s hard to say. What we do know is that the benefits increase as you eat more. This doesn’t mean that you have to consume megadoses of blueberries or red cabbage. “Some studies [have found] that small amounts are used very efficiently where the body needs them,” says Dr. Monica Giusti, a professor at Ohio State. Sure, they’re good for you, but let’s answer the real question, shall we? Will they work in the garden? How do they taste? Strawberry Fields (and Recipes) Forever | Purple vegetables can taste mighty good, but the sweet taste of those first strawberries of the season is absolutely heaven on Earth. There’s nothing like the joy of picking and eating a fresh strawberry. Try as we might, though, we can’t eat them all in one sitting. Try snack-size red, orange, and yellow mini bell peppers, the mild ‘Takara’ hybrid, or the heirloom ‘California Wonder’, or go (cautiously) all out with the very hot ‘Ghost Pepper’.
