It’s a non-religious celebration of spring and all the green things to come—a holiday of hope that's coming at just the right time. I’ll be nodding to Nowruz with this recipe for rice and beans perfumed with cinnamon sticks, cardamom, and turmeric. A heap of fresh dill goes in at the end, but if you don’t have any on hand, you can add parsley, mint, cilantro, or whatever tender herb or mix of herbs you like. You can even make a substitute for the beans: my local market didn’t have frozen favas on my last run, so I’ll be making it with rinsed, canned butter beans instead. The point is to make something you’re excited to eat—it may not be exactly what’s on the page, but we’re all doing the best we can, and that, at least, is something worth celebrating.
