The perfect holiday side dish. 2 pounds carrots 2 tbsp BeeMaid Honey 1 tbsp olive oil ¼ tsp salt ¼ tsp pepper ¼ cup balsamic vinegar 1 tbsp butter Preheat oven to 400F. Peel carrots and cut into 1" pieces. Place carrots onto parchment lined baking sheet. Drizzle with the olive oil and toss with the salt & pepper. Roast carrots for 30 minutes, stirring once. To prepare the honey balsamic glaze, combine the BeeMaid Honey and balsamic vinegar in a small pot. Simmer over med-low heat for ten minutes or until reduce slightly and thickened. Remove from heat and stir in butter. When carrots are finished roasting, drizzle honey balsamic glaze and stir to combine. Garnish with your favourite fresh herbs! |
