Coconut Creamed Greens

 
 

Ask most any Southerner and they’ll tell you that it’s imperative to eat braised greens on January 1—usually cooked with pork and probably served alongside black-eyed peas. But me? I eat braised greens multiple times throughout the month (all the luck I can get, you know?). And since this year’s COOK90 focus is all about leaning away from meat, I’m turning to these spiced and spicy greens. Enriched with coconut milk, they make for a deeply satisfying meal I can’t wait to come back to again and again.
