Thai Beef and Peanut Sauce Beans

This is a two-part recipe because I'm thrifty like that! This is my super easy, take on a delicious Thai beef dish. I use the marinade and turn it into a dipping sauce, then use the dipping sauce to make a sauce for vegetables on the side. It's the recipe that keeps giving!

Save all your vegetable peelings and ends, along with meat bones, in the freezer. When you have enough, make a broth that can be enjoyed as is, or as a base for other soups. I used the Instant Pot soup setting, which is 30 minutes after coming to pressure. If you are making it on the stovetop, allow a couple of hours.

To start my day, I love to sit down at the computer with a cup of coffee and look at all my favorite websites. When I have them, a handful of dried apples to munch on makes it even better. Dried apples are a good healthy snack anytime.
Make Hash with Leftover Pot Roast
An idea for a leftover pot roast is one that my grandmother, mother, and now I use: Cut up or shred some of the beef and save it for the next day along with some potatoes and carrots (as little or as much as you like). Grandma calls it "hash".
