Double-Stack Mushroom and Chicken Cheeseburgers

These chicken burgers are 50% mushrooms—which means they’re deeply savory and really juicy. After grilling, stack two thin patties high with melted cheese, shredded lettuce, sweet pickles, and curry mustard.

INGREDIENTS

• 1 lb. crimini mushrooms
• ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt
• 1 lb. ground chicken or turkey
• Vegetable oil
• 1 small onion
• Freshly ground black pepper
• 8 thin slices Muenster
• 4 potato buns
• 4 Tbsp. mayonnaise
• 4 Tbsp. curry mustard or other mustard
• Bread-and-butter pickles and shredded iceberg lettuce
