This simple recipe from Epi contributor Brigid Washington comes with two sauce options. One sauce pairs vanilla-scented cola with Scotch bonnet chiles and allspice, while the other combines ginger ale with mustard, fresh ginger, and apple cider vinegar. No one’s stopping you from trying them both.

INGREDIENTS

• ¼ cup Diamond Crystal or 2 Tbsp. Morton kosher salt
• 2 tsp. dark brown sugar
• 1 tsp. coarsely ground black pepper
• 1 tsp. granulated garlic
• 1 tsp. paprika
• ½ tsp. cayenne pepper
• 1 rack St. Louis–style pork spareribs
• ½ cup Spicy Cola Barbecue Sauce or Ginger-Mustard Barbecue Sauce
• Vegetable oil (for grill)
