Week 12: Chinese Noodle Soup

Chinese Noodle SoupThis week's soup uses leftover pork roast or Chinese takeout combined with noodles and veggies for a quick weeknight meal. If you have chicken or beef leftover instead, that would also be delicious.

Two Ingredient Pancakes

Pancakes in dishI am always looking for uses for over ripe bananas and couldn't believe how great this one is! Instead of making carb/calorie heavy banana bread turn your overripe bananas into pancakes!

Homemade Pizza Dough

By Ana

finished pizzaThis pizza dough is great! You can make the dough, and refrigerate it for up to a week. You can also freeze it. It's great for company, and the whole family. It takes just a few steps, and then add the sauce and toppings.

Apple Banana Fritters

By attosa

cut Apple Banana Fritters on plateI came up with this the other day when I couldn't decide if I wanted apple or banana fritters. I mixed them together and fell in love with the end result! I mashed the banana into the fritter batter, then dunked apple slices in it before I fried them up. The apple is cooked but still has a nice crisp texture around the edges, and the banana gives the dough a lovely smooth comfort. Delicious!

Tuna Pockets

cooked tuna pockets on plateFound some leftover tuna in the fridge. It was just in time because I'd been craving tuna pie the whole day. I didn't have money to buy it, and there was leftover tuna waiting to get cooked!

Replace Mayo With Bleu Cheese Dressing
For something a little different, try putting a good, rich Bleu cheese salad dressing on rye or whole grain bread when you make patty melts. Just use it in place of mayo or ketchup.
