Today's Featured PostWeek 8: Desperation Winter Soup
This week's soup can be customized based on what is in your pantry, produce drawer and freezer. Pretty much any combination of vegetables and spices can be used for this basic but hearty crockpot soup. Great for these last few weeks of winter.

Flourless Almond Butter Chocolate Oatmeal Cookies
By attosa
I made these specifically for my friend with a peanut allergy, and loves them to bits. If you'd like this to be truly gluten free, use gluten-free oats. Most standard oats are processed in places that handle wheat, so be sure the packaging reads that it is gluten-free. I make these in my toaster oven quite frequently, and just up the baking time by about 4 minutes.

A refreshing not too sweet salad with crunch, one of my favorites! Bring the juice from the mandarin oranges and enough water to make one cup to a boil. Mix with Jell-O. Add softened cream cheese and mix until dissolved

Use Holiday Chocolate for Grating or Curling
By Kelli
Holiday solid chocolate figures, such as Easter bunnies, Santas, or Valentine's hearts, are perfect for grating for dessert toppings. Buy several after season when they are clearanced and store them in your freezer.

If you like to sip at something during the day or prefer a light, between-meals snack, vegetable juice is an excellent option, hot or cold. Staying hydrated isn't always easy, and eating the recommended amount of vegetables every day can be challenging. Vegetable juice is a good solution, cold from the fridge or heated in a mug. Naturally, juice does not replace vegetables; think of it as a supplement not a substitute.
