It’s rich and elegant, but truly simple to pull together. What really makes it special is a mix of mushrooms; so buy two or three different varieties, choosing the best you can afford. I especially like the way long shreds of torn oyster and maitake mushrooms thread themselves through the pasta, but a little cremini or shiitake in there for big meaty flavor is great, too—and if you can find them, feathery lion’s mane mushrooms go especially well with the creamy sauce.
