Treat Mom to a home-cooked meal with a KICK this weekend! When I see creamed corn on a menu, my eyes light up. This recipe is unique in that it opts for Pepper Jack instead of cream cheese, so it's lighter (but just as creamy) with a bit of "bite" in each bite. ;)
